Gorgeous Guacamole

I have no idea why all the titles of my posts today are full of alliteration, perhaps I’m just getting caught up in my own marvellous Mexican mayhem, my mind racing with idea of all the things I want to try, & want you to try!  I hope at least one of the recipes on the blog this month will be added into regular food rotation in your kitchen! We’ll start with a fairly simple recipe…one that dates back to the Aztecs. You’ll need:

2 chillies (serrano)
small bunch coriander
1/2 finely diced onion
2  tomatoes finely diced
1/4 tsp of salt
2 haas avocados
2 tsp fresh lime juice

Grind all the ingredients with the exception of the avocados in a mortar and pestle until they are a paste. Depending on the juice content of your tomatoes, you may need to add some water to arrive at a nice smooth paste.  Cut your avocados in half around the seed, remove the seed from the centre and scoop out the fruit with a spoon. Add the avocado to your paste and mash together until incorporated but still slightly lumpy.  Add 1tsp of lime juice per avocado. Not only does the lime intensify the flavour and add another dimension of freshness, but it keeps the avocado from oxidising and turning brown.

If you don’t own a mortar and pestle, just chop your chillies, coriander, onion and tomatoes together…put them in a bowl and add the salt…mixing well to incorporate. Use the same method for the fruit and mash with the back of a fork. You can also use a food processor but I find this makes the guacamole too smooth for my taste. You can experiment and find the best method for you. ENJOY!
