Recently at the MAC here in Birmingham, I met the owner of Lewis’s, deli/shop in Moseley. A really nice guy, and quite passionate about bringing the taste of authentic Mexican food to Birmingham. It is true that good Mexican food is hard to find in England…without a proper recommendation/search. I have found a few in London; Chilango, Tortilla, and Wahaca. The thing that I love most about Mexican food is that it is simple and fresh…and despite the meat/cheese layered versions of today, it was traditionally quite vegetarian.
I was pleased to see that Lewis was being supplied by Cool Chile who are an amazing importer of quality Mexican food products and supplies. I love them because they are a small operation and their products are amazingly fresh and tasty. I encountered them first when I used to frequent Borough Market when living on a barge near Tower Bridge. They make their corn tortillas in house and you can get them in bulk in three different sizes.Traditional corn tortillas are wheat and gluten free! WIN!
So in the next month, I hope to fill your head/ and tummies with fresh and easy Mexican inspired recipes that you can make at home. Some of the ingredients we’ll be using will be avocados, tomatoes, onion, limes, serrano chiles or jalepenos, garlic, fresh coriander, oregano, paprika, cumin, corn tortillas, masa flour, quick cook polenta and eggs.
